Simple Chia Parfait

I saw this recipe on the GMO free Girl blog and it looks great. I love the whole idea of a fruity, chia seed number made with nut milk. And the nut milk is home made too! Brilliant.

One of the easiest ways to use chia seeds is to make a pudding.  I always make mine with my homemade nut milk recipe and sometimes I’ll mash up a banana to give it a little more sweetness, but for this recipe I kept it plain. Before you start making this, please keep in mind that you have to let the chia seeds sit and thicken – overnight is best, but at a minimum 2-3 hours.  It’s always good to be prepared before you start a recipe :)

Simple Chia Parfait


  • 3 tablespoons chia seeds
  • 1 cup nut milk
  • 1 scraped vanilla bean
  • 2 teaspoons maple syrup (optional)*
  • 1-2 cups fresh chopped fruit (strawberries, blueberries, kiwis)

In a small bowl whisk together the chia seeds, nut milk, vanilla extract, and maple syrup (if using).  Alternatively you can mash a banana and use that instead of the maple syrup.  It will also give the chia pudding a more chunky texture and help it to thicken faster.

Cover the bowl and place the chia mixture in the refrigerator for 2-3 hours or overnight if you can.

Remove the chia pudding from the refrigerator and place into individual parfait cups, alternating with the chopped fruit mixture.

I’ve never used Chia seeds for a pudding like this. But it’s a great idea for summer berries which will be bursting out really soon. Ace. Got any more puddings ideas using chia seeds?
