When I was asked to review the Ms Cupcake cookbook Snickerdoodles was one of the recipes I was looking forward to checking out, because of the name. It is an odd name! I was baking the vegan soda bread again and wanted to have something else in the oven so Ms Cupcake’s snickerdoodles seemed like a very decent choice.
What are snickerdoodles anyway?
Snickerdoodles are cinnamon cookies! Ms Cupcake says
Snickerdoodles is the name those on the other side of the Atlantic have given to sugar cookies that have been rolled in cinnamon-sugar prior to baking
I thought Snickerdoodles was an Americanism, so there you go. Similar to the Lemon and Blueberry loaf cake I changed the recipe. Well I was never likely to use plain flour so that had to go, as did the caster sugar. In fact, there did seem like an awful lot of sugar in the recipe so I cut right back. And I also cut back on the fat, well virgin coconut oil is not cheap and I prefer not to use margarine… SO there were a few adjustments.
Also, I didn’t have any scales so measurements were very much guess work but they came out brilliant! I tried to go for a half batch of the recipe in the book but there was a lot of guessing going on.
Ms Cupcakes Snickerdoodles
200g quinoa flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
2 tbsp cinnamon
75g virgin coconut oil
170g coconut sugar
1/2 a banana as egg replacement. Another Ms Cupcake tip which has worked perfectly!
4 tbsp lukewarm water
ground almond and flaxseed (optional)
chia seeds (optional)There’s some non-sticking prep required for this, I had to use sesame oil for the baking sheet but any oil/fat will do it. And heat the oven to 180 C/350 F/gas 4.
Then combine the dry ingredients. Mash together the coconut oil (I put it in the oven to melt) and sugar. I forgot to add 1/2 a tsp of vanilla essence.
Mix up some egg replacer with the lukewarm water. I blended half a banana with the water . Then you mix the whole lot together. I had got the measures wrong so had to add more flour than I started with. This is when I added the ground almond and flax. I wanted the mix to have a bread dough consistency. So I added and mixed til I got it. And I added some chia too, cos chia is ace!
Then bake for 15 mins. And there you are, snickerdoodle cookies/biscuits from the MS Cupake repertoire, brilliant, again. And very easy.
You were supposed to roll the mix in some sugared cinnamon but I thought the mix was sweet enough. I don’t want them too sweet. I used less sugar as I think the coconut sugar is very sweet, more so than normal processed stuff. These are good, give them a try!
